This salad reminds me of my vegan raw days. The flavor is immense and because of the ingredients, it'll also keep a day or two in the fridge after it's been dressed. Though good luck having any leftovers of this.
Ingredients:
1 bunch kale, chopped into small pieces
1 cup beet, peeled and coarsely shredded
1/2 cup carrot, coarsely shredded
4 green onions, thinly sliced
1/2 cup red bell pepper, small dice
1/2 cup broccoli, small dice
1/3 cup olive oil
1/4 cup apple cider vinegar
3 tablespoons tamari soy
3 tablespoons tahini
1 clove garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Directions:
Combine vegetables in large bowl.
Whisk dressing ingredients together in small bowl, then add to salad and toss well.
